Two individual pounds, this bundle includes 1lb each of: Yemen Mocca – Ansi Natural Processed Tasting Notes: Best at light to medium roasts but works well from light to dark. A brighter and more delicate taste than most Yemen naturals. At a lighter roasts the fruitiness is the first note to hit your tongue, both red fruity and a bit of lemon, floral aromatics, a hint of jasmine with a little setup. Medium body, and a sweetness closer to citrus peel and honey than to sugar. Has a bit of earthy/chocolate/spice to balance it out. Take it to a medium roast to balance the tastes. Acidity settles into stone fruit, the body thickens toward syrupy, and a cocoa and dried fruit base comes up underneath the florals. That is where this lot is at its most complete. Push into a dark roast and the fruit compresses into raisin and date, most of the floral character leaves, and you get the heavy old world Yemen cup: bittersweet chocolate, a little woody spice, big body, low acidity. Like any Yemen natural it moves around a bit from cup to cup, which is part of the appeal. Roasting Notes: Treat it like the old world natural it is. Expect heavy chaff, uneven bean size and irregular looking greens. That is normal for Yemen and not a defect, so plan on sorting the obvious quakers out after the roast instead of fighting it in the drum. Density is high for the bean size, so it takes heat well early on, but color will look patchy through the middle of the roast and evens out a lot in the final minute. Give it a steady ramp and do not chase a fast roast. For a light roast, drop about 30 to 45 seconds after first crack ends and keep development gentle so the jasmine and lemon survive. For a medium, our pick on this lot, run 1:00 to 1:30 past the end of first crack, well short of second, which is where the stone fruit, cocoa and florals all sit together. For a dark roast, take it to the first snaps of second crack and drop there, since past that point the fruit flattens fast and Yemen natural
