Description
This green coffee comes from Finca El Pastoral, a 150 acre farm in the Jinotega department of northern Nicaragua that belongs to Juan de Dios Castillo Arauz. Castillo is an agronomist, and with his four siblings he founded J&M Family Coffee, a family export company named after their parents, Juan and Miriam, who got into coffee with income from the family tailoring business in the town of Jinotega. J&M started operations in 2014 and handles the coffee all the way through to the export contract, so quality control and traceability stay in house. Jinotega sits in the north central highlands, the zone that with Matagalpa and Nueva Segovia holds more than 85 percent of the arabica farms in the country, on land running from about 365 up to 1,500 masl. El Pastoral is planted between 1,100 and 1,460 masl on clay mineral soils, putting its upper blocks at the ceiling of that range. Picking runs December into March. Beyond its own farm, J&M buys from smallholders elsewhere in Nicaragua and backs them with financing and technical assistance. The planting is Catuai and Parainema. Catuai is the compact Mundo Novo and Caturra cross out of Brazil, high yielding and dependable in the cup. Parainema is a Sarchimor selection released in Honduras in 2004, rust resistant, large seeded, and it cups well grown high, which this is. Cherry is picked and sorted at the farm, then depulped, fermented, washed and given a first pass of drying on site. The parchment then moves to a nearby facility where drying is finished in the sun and in guardiolas before the coffee is prepared for export as SHG EP. Tasting Notes: Classic and clean Nicaraguan coffee. A malty cup profile with hints of floral acidity. At lighter roasts, it picks up a hint of nutty/caramel like tastes and will shows hints of sweet citric along with a dry malty finish, can risk a little grassy if too close to 1st crack.
