Description
Java Taman Dadar comes from smallholder families farming around the villages of Kayumas and Curah Tatal, in the Arjasa district of Situbondo regency, on the northern slopes of the Ijen highlands in East Java. The plots sit between 900 and 1600 masl on volcanic loam, planted in Typica, picked from May through September, and this lot is wet hulled, sun dried and certified organic. Kayumas is old coffee country. Families in the village were already growing arabica before Dutch investors leased the Kayumas estate in 1883, and the crop stayed in smallholder hands from there: by 2018 the village counted eight farmer groups and 410 coffee growers, with around 1500 hectares of village coffee under shade trees on the volcanic slopes above Arjasa. The local cooperative, KSU Surya Abadi Kayumas, started in 2003 with 40 farmers pooling the cost of running their plots, and in September 2018 it sent the first container of Kayumas arabica sold to Fairtrade standards into the United States, 44,400 kilos moved through the Sidoarjo exporter PT Indokom Citra Persada, a company buying coffee in these villages since 2006. Java Taman Dadar is the name the village coffee travels under, and Kayumas arabica also carries the Java Ijen Raung single origin certificate. Wet hulling is what gives this coffee its shape. The parchment is stripped off while the beans are still soft and wet, at a moisture level where washed coffee would still be sitting on the drying bed, and the bare bean finishes drying in the sun. That short cut through the drying curve is what leaves the green beans bluish and irregular, and what builds the deep, low toned, earthy character that people buy Indonesian coffee for. Tasting Notes: Java Taman Dadar is cleaner and brighter than the heavy, earthy cup most people expect from Indonesia. When we tasted it we found a floral acidity that leans toward orange without getting fruity, good sweetness and a medium body. The finish has that classic wet hulled flavor, a little wood
