Description

The Jairo Arcila Santa Monica Washed Castillo – Wine Yeast / Lychee is one of the more expressive co-fermented coffees from Finca Santa Monica. The ripe coffee cherries are carefully selected and fermented in a low-oxygen environment. During fermentation, lychee and wine yeast are added . After fermentation, the coffee is washed and dried on raised beds . That washed finish is important because it gives the coffee considerably more clarity than some of Arcila's heavier honey or natural co-ferments. The wine yeast helps convert sugars during fermentation and contributes additional aromatic compounds, while the lychee brings a very distinctive tropical/floral character Very limited. Very special.
