Honduras FT Organic Marcala RAOS Flor Azul SHG EP Arabica Raw coffee Beans Medium to sweetly balanced acidity, good body, sweet, light hints of orange, honey, grapefruit, milk chocolate, and hazelnut, clean, short soft finish. Roasting Aroma: Nuts, brown sugar, citrus Dry Aroma: Chocolate, orange, light grapefruit Brewed Aroma: Cocoa, honey, very faint floral With a very fast hot roast I was able to achieve a fairly bright cup. Growers / Producer: Cooperativa RAOS Flor Azul; Cooperativa Regional Mixta de Agricultores Organicos de la Sierra (RAOS), an association of 200 members who produce coffee on small family owned farmers in the Marcala growing region within the department of La Paz, Honduras, produces high quality Organic coffee. Coffee grown in the Marcala region has a protected designation of origin (DENOMINACION DE ORIGEN CAFE DE MARCALA) to preserve the renowned reputation of Marcala, Honduras Grade: SHG EP Varietals: Bourbon, Typica, Catuai, Caturra Altitude: 1,200 - 1,800 Meters Above Sea Level Region: La Paz, Marcala Processing: Fully Washed and sun dried and mechanical driers Soil: Clay minerals Harvest: December - March Certifications: Organic Strictly High Grown, SHG : Coffee grown above this Altitude Standard produce a denser (Strictly Hard Bean) more vibrant flavor profile than those grown at lower Altitudes. Higher altitudes provide a Coffee friendly environment the climate tends to be cooler with less direct sunshine and plenty of moisture. This causes the coffee fruit to mature slowly allowing more time to develop depth as well as many of the desirable characteristics we look for in fine Specialty coffees. European Process, EP : Hand Sorting to remove defects to the "EP Standard" continues until no more than 8 defects are found in a 300 gram sample. This obviously very labor intense hand sorting improves Cup Quality and Consistency.
