Nestled near the pyramids of the Mayan King known in the records as “18 Rabbit” (from which this coffee pulls its name), 18 Rabbit (18 Conejos) is a collective of farms all owned by different members of the Zelaya Ontreras family. Dulce Marlen, the owner of Finca Dulce Luna, is the matriarch of the family, and the owner of 18 Rabbit exports. Her and her husband were pioneers of both organic and Biodynamic farming techniques, being intentional about naturally regenerating the soil they use for their agriculture. Members of the 18 Rabbit family have placed in the top 10 for Honduras’ Cup of Excellence, and work together to create unique fermentations and cupping experiences for their partners. The name of this coffee, “18 Rabbit,” pays homage to Honduras’ rich cultural heritage, evoking the figure of Uaxaclajuun Ubʼaah Kʼawiil, the thirteenth ruler of the ancient Mayan city of Copán. Popularly known as “18 Rabbit” due to the interpretation of the glyphs of his name on the stelae, this king was a great patron of the arts and responsible for the most beautiful and detailed monuments at the archaeological site, known as the “Forest of the Kings.” Tasting Notes: A good, clean, high rated cup of Honduran coffee. We liked it best right between a light and medium roast. At light roasts it will have a little hint of lemony acidity, a sweet edge and a little nuttiness. Delicate tones, easy drinking lighter roast coffee, a bit on the neutral side for the roast point. Medium roasts introduce a more chocolaty edge, fuller flavored than the ligher roast points but will mute up much of the citric acidity: a bit smoother and slightly fuller bodied cup, good daily drinking territory. Darker roasts pick up some roasty/smoky accents but it compliments the cup, the only roast levels that is not smooth and delicate, darker roasts put an stronger more semi-sweet edge on the cup. A richer cup with great mouthfeel, works great for espresso or cream and sugar fans at dark roast points. Roast
