Description
A wonderful certified small production decaf from Honduras! This coffee is decaffeinated using the Mountain Water Process (MWP) at a dedicated plant in Mexico. MWP is a 100% chemical-free, solvent-free method that relies only on pure water sourced from the glaciers of Pico de Orizaba. The green beans are pre-soaked to open them up, then bathed in a saturated solution of coffee solubles that pulls the caffeine out while leaving the flavor compounds, oils, and sugars remarkably intact. The caffeine is filtered from the solution, and the beans are re-dried and re-bagged the result is a decaf that still tastes like the origin it came from. Honduras is the largest coffee producer in Central America. The sector runs almost entirely on small farms organized into cooperatives. Coffee grows in 210 of the 298 municipalities and in 15 of the 18 departments. More than 100,000 families work it. The country recognizes six growing regions: Copan, Comayagua, Montecillos, Opalaca, Agalta and El Paraiso. Above 1,200 meters is specialty ground here, so this lot sits well inside that band. Descamex takes the caffeine out at its plant in Cordoba, Veracruz, with the Mountain Water Process. Steam opens the beans. They then soak in a water based solution already saturated with coffee solubles. Caffeine is the only thing with anywhere to go, so the flavor stays put. The process pulls out more than 97 percent of it. A triple stage dryer brings the coffee back to 10 to 12 percent moisture before milling and polishing. The plant holds organic certification, so the lot keeps its organic status. Tasting Notes: We thought it best from medium to dark roasts. A rich cup on the chocolate and nutty side of tastes. Almond, caramel and dark chocolate are the backbone, with a little crispness upfront at light to medium roasts, medium body with a sweet edge. Light roasts stay soft and nutty with a little citrus on top. Tastier than many decafs at lighter roasts but easier to tell its a decaf. Medium to d
