It has been a long time since we could all consistently find that rich blueberry Harar, or that jasmine floral Yirgacheffe. After years of profiles changing from region to region in Ethiopia, Cafe Kreyol’s post harvest process and sourcing team decided to go a new route. As opposed to labeling these Ethiopian coffees based solely on the region, and assuming they will have the flavor profiles we are all looking for, our skilled QC along with our post harvest process technicians, and a network of over 300 producers in three regions of Ethiopia, began to classify them.
