Description
This is a natural-process coffee from the Guji zone of southern Ethiopia, one of the country’s best-known growing areas. Guji coffee used to be sold under the Sidamo name and is now traded as its own region. In a natural process the whole cherry dries around the seed before the fruit is removed, which gives a sweeter, fruitier cup with more body than a washed coffee. Grown in Guji zone, Oromia Region, Ethiopia Altitude 1,700–1,900 m Varieties Ethiopian heirloom, plus JARC selections 74110 and 74112 Process Natural, dried on raised beds Harvest November–February Grade G4 Most Ethiopian coffee is grown by smallholders on plots under a hectare, who bring their cherry to local stations where it’s pooled into lots. Ethiopia grades coffee by defects and cup quality rather than bean size; G4 allows more defects than the G1–G2 specialty grades, which keeps the price friendly for an everyday natural. Bag sizes: 1 lb, 5 lb and 15 lb. Store sealed in a cool, dry, dark place. FAQ What does “natural” mean? The cherry is dried whole with the fruit still on, then hulled. That’s where the fruit-forward notes come from. What does G4 mean? Ethiopia’s grades (G1–G5) count defects and score the cup. G4 allows more defects than G1–G2. Is this coffee roasted? No. It’s green, unroasted coffee for home roasting.
