Region Gedeb · Gedeo Zone, Yirgacheffe • Process Supernatural (Anaerobic Natural) • Grade 1 • Yirgacheffe · Gr. 1 · Supernatural Banko Chelchele Lot 2 QUALITIES: blueberry & grape • cherry • rose florals • dry white wine RECOMMENDED ROAST: Light-Medium CHAFF LEVEL: Medium This is a smallholder-grown, centrally processed anaerobic natural from Ethiopia’s Gedeb district , in the south-eastern corner of the Gedeo Zone (officially “Yirgacheffe”). Cherry is delivered to the Banko Chelchele washing station run by EDN Ethiopian Coffee , an independent processor and exporter with sites in Guji, Gedeb and Sidama. A few hundred outgrowers, each farming an average of 1-2 hectares of diversified, largely organic and regenerative plots between 1,900 and 2,000 masl , supply the ripe cherry for this lot. “Supernatural” is EDN’s name for coffees whose whole cherry is fermented before drying: here cherry is sorted for uniform ripeness and color, fermented in tank for around 24 hours in full cherry, then moved straight to raised screen beds to sun-dry for two to four weeks. That pre-drying ferment gives the cup an acidic, fruity kick that conventional naturals rarely reach. Gedeb sits much closer to the Guji Zone than the rest of Yirgacheffe, and its coffees are among the most explosive profiles seen anywhere in Ethiopia: heady, perfume-like volatiles over a candy-sweet structure. This is the middle lot of the three we are offering. It shares the citric backbone of Lot 1, but everything lands more contained: the acidity is clear without the sharp edge, and the ferment is present without taking over. Expect blueberry and grape up front, cherry underneath, rose in the aroma and milk chocolate on the finish, with a dry white-wine note running through it. A clean cup, and the most balanced of the group in the sense that no single descriptor dominates. As with most bright naturals, lighter roasts keep the berry and floral character clean and lively.
