Everything upstream is shared with its twin: the same few hundred outgrowers in Ethiopia’s Gedeb district , in the south-eastern corner of the Gedeo Zone (officially “Yirgacheffe”), each tending 1-2 hectares of diversified, largely organic and regenerative garden plots between 1,900 and 2,000 masl ; the same Banko Chelchele washing station run by EDN Ethiopian Coffee , an independent processor and exporter with sites in Guji, Gedeb and Sidama; and the same protocol: whole ripe cherry sorted for color and uniform ripeness, sealed in tank to ferment anaerobically for roughly 24 hours , then carried straight to raised screen beds for two to four weeks of slow sun drying. What separates the lots is the cup. Here the ferment leads: oaky, with a boozy edge, and the fruit comes in behind it rather than out front. Strawberry and blackberry sit on a base of toffee and honey sweetness, with apricot in the background and chocolate on the finish. Acidity is high and sharp, lemon-driven, with a little astringent bite along the edges. The cup is clean start to finish, but it is more fermented and less candy-sweet than last year’s crop, so if you are looking for a straight fruit bomb this is not it. What it is, is the clearest look we have at what a supernatural ferment actually does.
