Dehab’s Diamond Natural – Ethiopia Kaffa Forest Discover one of the most approachable and fruit-forward Ethiopian naturals available today. Dehab’s Diamond Natural shines with juicy berry sweetness, floral lift, and syrupy depth yet remains forgiving for home roasters. A great starting point is to end the roast 15–30 seconds after the start of first crack, then rest the coffee 3–10 days to allow clarity, sweetness, and balance to fully develop. This lot comes from Dahab Specialty Farm, a women-led operation managed by Dehab Mesfin Bitewlign in the historic Kaffa Forest birthplace of Coffea arabica. Dehab transitioned from a finance background into coffee production and built her farm around principles of quality, empowerment, and sustainable forestry. Women play central roles in harvesting, sorting, and processing, and the farm’s model reinvests earnings into local families, education, and long-term agricultural stability. The farm lies within the buffer zones of the UNESCO-recognized Kafa Biosphere Reserve, where coffee grows under natural forest canopy. Slower fruit development under shade produces denser cherries with remarkable sweetness and layered complexity. This offering was created from individually cupped nano-lots, each selected during harvest for clarity and standout character. These nano-lots were combined into a traceable micro-lot, giving this coffee a higher level of uniformity, sweetness, and expressiveness than typical regional blends. Recent harvests of Dehab’s Diamond have earned mid–high 80s scores on professional cupping tables (approximately 86–87.5 points), reflecting the refined sweetness, structure, and cleanliness this farm is known for.
