Description
This bundle features a fresh batch of six of our favorite daily drinker coffees, each at an incredible price. One pound each of: Indonesian Java Org. Kayumas – Taman Dadar – Wet Hulled Tasting Notes: Java Taman Dadar is cleaner and brighter than the heavy, earthy cup most people expect from Indonesia. When we tasted it we found a floral acidity that leans toward orange without getting fruity, good sweetness and a medium body. The finish has that classic wet hulled flavor, a little woody with a hint of almond, and it all stays clean, which is what we liked most. Light roasts keep the most floral and orange notes. Medium is where it balances out, with brown sugar, milk chocolate and almond, softer acidity and a rounder body. Taken dark it turns to molasses and dark chocolate, the acidity fades and the earthy Indonesian side comes forward with a heavy body and a long finish. For the sweetest cup, aim for medium to medium dark. Roasting Notes: The beans are irregular in size and color, bluish green and a bit flat, which is normal for wet hulled coffee, so a batch can look uneven even when the cup is not. Chaff is low. Start with a little less heat than usual and keep it steady at the beginning so the big and small beans roast evenly. First crack is quiet and easy to miss, so watch the color and smell along with the sound, and lower the heat a little when it starts, because wet hulled coffee moves fast once it gets going. For a medium roast, end it 45 to 75 seconds after first crack finishes. For a darker cup, take it to the first few snaps of second crack and stop there. Let it rest 3 to 5 days so the body smooths out and the chocolate comes through. Colombian Supremo BCT Select Tasting Notes: The aroma of this coffee is very nice; sweet with a little spice & floral notes. Best at a medium to borderline dark roast. Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really
