Organic Bolivia Yungas BIO Arabica Cooperative Fair Trade SHG EP Fully Washed Arabica Green coffee Beans Moderately balanced acidity, smooth body, sweet, richish, light citrus, toffee, hints of chocolate, walnut, spice, and dried apple, well balanced, soft sweet finish Roasting Aroma: Sweet, light fruit, toffee, stonefruit Dry Aroma: Chocolate, fruit, vanilla, some citrus Brewed Aroma: Caramel, cocoa, spice, hints of orange and cherry Region: Yungas, typically heavy forest along the Eastern slopes of the Andes Mountain range, near del departmento de La Paz Producer: Bio Arabica Cooperative, lead by Elias Choconapi includes 38 Small holder Families as Members. Growers: Family Small Holder Producer Members of Bio Arabica Cooperative each with about 8 hectares in coffee production are dedicated to producing higher quality coffee through training and agricultural assistance. Grade: SHG EP Varietals: Catuai, Typica Altitude: 1,500 - 1,700 Meters Above Sea Level Processing: Fully Washed and sun dried on Raised beds. Soil: rich fertile Relative Humidity: 23% Harvest: October - February Certification: Organic, Strictly High Grown: SHG; coffee grown above this Altitude Standard produce a denser (Strictly Hard Bean) more vibrant flavor profile than those grown at lower Altitudes. Higher altitudes provide a Coffee friendly environment the climate tends to be cooler with less direct sunshine and plenty of moisture. This causes the coffee fruit to mature slowly allowing more time to develop depth as well as many of the desirable characteristics we look for in fine Specialty coffees. European Process: Hand Sorting to remove defects to the "EP Standard" continues until no more than 8 defects are found in a 300 gram sample. This obviously very labor intense hand sorting improves Cup Quality and Consistency.
